In response to the demand this is the recipe for the vegan cookies I was giving out at SFU Surrey Clubs Day… Adapted from an online recipe I found a long time ago. Enjoy!
Preheat Oven to 350 Degrees.
Mix the wet ingredients in a bowl.
1/3 C Canola Oil
1/4 C Non-dairy milk (I used Coconut Milk but soy, rice or almond would also work)
3/4 t Vanilla Extract
1/4 t Coconut Extract
Mix the dry ingredients in a seperate bowl.
2/3 C Brown Sugar
1 1/2 C Flour
1 t Baking Powder
1/4 t Baking Soda
1/8 t Salt
Slowly pour the wet ingredients into the dry ingredients. Mix until well combined.
Fold in 3/4 C Vegan Chocolate Chips.
Make into whatever shape your heart desires (i’m giving you ideas aren’t I?)
Bake for 15 to 20 minutes.
